Spoke nipple
A spoke nipple used to tension and secure wheel spokes to the rim on front and rear wheel assemblies.
S79-2 is a spoke nipple, the small threaded fitting that anchors the outer end of a wheel spoke to the rim and lets you draw the spoke up to tension. It shows up across a wide range of front and rear wheel figures in the catalog, from standard front and rear wheel assemblies to the quickly-detachable rear wheel and various front wheel configurations noted for different models and hub types.

Because it appears in so many wheel-building figures over such a long catalog run, this is one of those parts that gets used a handful at a time whenever you're lacing or re-tensioning a wheel, rather than something tied to one specific bike. If your parts book lists this under S79-2, note that the part was later carried forward under 37-4200 - same physical nipple, just a renumbering down the line.
